Minestrone Rustica

Minestrone is a great way to jump start your diet in the wintertime. It is filled with vegetables, hearty beans and spices which will satisfy and warm you. Carry a thermos of this soup with you and stay on track all day. We love sharing this soup with friends and family and hope you will too. Buon Appetito!

Minestrone Rustica Recipe

1 Cup Onion, Finely Chopped
1 Cup Celery, Finely Chopped
1 Cup Carrot, Finely Chopped
4 Cloves Garlic, Minced
1 Potato, Finely Diced
1 Fifteen Ounce Can Diced or Crushed Tomatoes
1 Fifteen Ounce Can Cannellini or Kidney Beans
2 Teaspoons Grated Parmesan Cheese
or Other Italian Cheese, For Garnish
3 Cups Baby Spinach
1 Sprig Fresh Rosemary
1/2 Cup Fresh Parsley, Chopped
1/4 Teaspoon Salt
Freshly Ground Black Pepper

Heat a large pot and coat with olive oil. Add onion, carrots, celery and garlic and cook for 10 minutes on medium heat. Put tomatoes, beans, parsley, potato, 4 cups of water, and rosemary into the pot. Season with salt and black pepper. Bring to a boil, then turn heat down and simmer for 15 minutes. Add spinach, stir well, and simmer for 10 minutes more. When done, remove rosemary stem. Leaves will have fallen off and flavored the soup. Serve in bowls with a sprinkle of parmesan. Serves three.
