Along with onions, scallions, shallots and garlic, chives are part of the allium family of vegetables that appear so often in the recipes of The Fat Resistance Diet. Alliums reduce inflammation, help detoxification and boost the immune system.
Chives are featured as a garnish in restaurants, and are easy to use at home. Chives are sold in bunches or in a container at the supermarket. Choose leaves that have been freshly cut, they should be a vibrant green and firm.
At home, simply rinse the leaves, dry well and cut them with kitchen scissors. You can sprinkle chopped chives on soups, omelets, seafood and sandwiches for a nice splash of green and a touch of mild flavor.
